The origins and ethos of Lazy Lohan’s Bistro
Lazy
Lohan’s Bistro was founded on the ethos of the Slow Food Movement
(hence Lazy) and inspired by some of the principles of Buddhism (hence
*Lohan).
The
doors opened on 10th August 2007. Tina Kenny, the owner/chef felt that
Edinburgh was lacking in affordable eateries serving quality food, in a
relaxed manner. She wanted to promote healthy, inexpensive eating using only the freshest, seasonal ingredients; locally sourced wherever possible.
All dishes, including our daily bread, are made from start to finish on the premises.

The Slow Food Movement and Eco-gastronomy
The
Slow Food movement is founded upon this concept of eco-gastronomy – a
recognition of the strong connections between plate and planet.
The
definition of Slow Food is good, clean and fair food. Set up in the
late 1980’s in response to the gathering momentum of the Fast Food
phenomenon, the Slow Food Movement believes that ‘the food we eat
should taste good; that it should be produced in a clean way that does
not harm the environment, animal welfare or our health; and that food
producers should receive fair compensation for their work.’
